How to Cook Fresh Vegetable & Pasta Noodles Soup Recipe

Ingredients:
Carrots cut them in dice 3 pieces
Zucchini cut them in dice 2 pieces
Celery, cut them in dice 2 sticks
Leeks, cut them in dice 1 piece ( add only the white part)
Red pepper cut them in dice ½ piece
Spaghetti or elbow pasta 100gr
Olive oil 60 gr
Tomato paste 1 spoon
Salt & white pepper as need it
Parsley fine chopped 1 soup spoon
Thyme fine chopped 1 soup spoon.
Procedure:
Heat the oil and saute all the vegetables ( do not add the thyme and the parsley on that stage because they will be bitter) and add some salt & white pepper.
Add 2 ltr of water and the tomato paste and let the soup to reduce in half. Add the pasta and the herbs last. When the soup is reduce by half and the pasta is boiled add the herbs (parsley ans fresh thyme) and remove from the stove.
