Mussels with Saffron Mayonnaise
Ingredients:
Small cooked mussels (out of the shell kept in cooking juice)
Mayonnaise
Saffron
Milk
Dill
Method:
Warm the milk and infuse with the saffron and cool
Mix the saffron infusion with the mayonnaise
For the presentation arrange the mussels on the plate spoon a little of the juice over, quenelle the saffron mayonnaise to the side garnish with dill and serve
